The Institute for Food Quality and Safety (LMQS) is centrally located in Hanover at the Bischofsholer Damm campus, with two locations. The institute's activities focus on teaching and research, particularly concerning the quality, safety, and hygiene of food of animal origin. In addition, it offers a range of services, which are regularly performed by its staff.

The LMQS team comprises more than 60 employees working in seven different departments.

In accordance with the Veterinary Licensing Regulations, the institute provides instruction to veterinary students in meat hygiene, dairy science, and food science, including food hygiene. Students are taught meat inspection, milk analysis, and the examination of food of animal origin through numerous lectures and practical courses throughout the semester.

The LMQS team comprises more than 60 employees working in seven different departments. The institute also coordinates the Master's programs BestVet and Food Process and Product Engineering (MSc FPPE). Within BestVet, the institute covers the field of ante-mortem and post-mortem meat inspection.

As part of interdisciplinary events, the institute regularly collaborates with third parties (e.g., the German Armed Forces, the Lower Saxony State Office for Consumer Protection and Food Safety (LAVES), and other clinics of the University of Veterinary Medicine Foundation) to offer a broader perspective. The institute also coordinates the Master's program BestVet, where it covers the field of ante-mortem and post-mortem meat inspection.

The working groups present their areas of focus and research topics on their individual websites:
